Easy Lemon Drizzle Cake

So for my next recipe, I thought I would do a quick and easy lemon drizzle cake.
Preheat your oven to 180'c. Grease and line an 18cm square cake tin

Ingredients:
  • 2 eggs
  • 175g caster sugar
  • Zest of 2 lemons
  • 175g self raising flour
  • 125ml milk
  • icing sugar for dusting
For the drizzle:
  • 150g icing sugar
  • juice of 2 lemons

Method-Cake:
  • Put the eggs, sugar and butter into a large bowl and mix them well until light and fluffy.
  • Add the zest of the lemons, then gradually fold in the flour until even.
  • Gently stir in the milk until all combined, and then pour into a lined cake tin and smooth it to an even level.
  • Bake in the preheated oven for 45-50 minutes or until golden brown or firm to the touch.
  • Place the icing sugar and lemon juice in a small pan and heat on a low heat, stirring until it forms a white, milky colour. Do not boil it.
  • Prick the warm cake with a knife or skewer (make lots of hole-it makes it really yummy!), and spoon the hot syrup evenly on top, allowing it to be absorbed.
  • Finally, leave to cool in the tin and once completely cool, cut into squares and dust with icing sugar.
