Easy Lemon Drizzle Cake

So for my next recipe, I thought I would do a quick and easy lemon drizzle cake.
Preheat your oven to 180'c. Grease and line an 18cm square cake tin

Ingredients:

• 2 eggs
• 175g caster sugar
• Zest of 2 lemons
• 175g self raising flour
• 125ml milk
• icing sugar for dusting

For the drizzle:

• 150g icing sugar
• juice of 2 lemons

Method-Cake:

• Put the eggs, sugar and butter into a large bowl and mix them well until light and fluffy.
• Add the zest of the lemons, then gradually fold in the flour until even.
• Gently stir in the milk until all combined, and then pour into a lined cake tin and smooth it to an even level.

• Bake in the preheated oven for 45-50 minutes or until golden brown or firm to the touch.
• Place the icing sugar and lemon juice in a small pan and heat on a low heat, stirring until it forms a white, milky colour. Do not boil it.
• Prick the warm cake with a knife or skewer (make lots of hole-it makes it really yummy!), and spoon the hot syrup evenly on top, allowing it to be absorbed.

• Finally, leave to cool in the tin and once completely cool, cut into squares and dust with icing sugar.

Outfit post-Spring 2017

I thought I would write a little post about my current favourite outfit. This has definitely been my go to outfit this month.

Coat-Hollister (£79)                                                                                                   
This is my second coat from Hollister and I was treated to this one for Christmas. My last one was slightly longer and lasted my 4 years which I wore and dragged around school nearly everyday so  I knew this coat was going to be a good purchase. I fine them more warm and comfortable than my old Superdry so I'd recommend checking them out. This one is lined all the way through with heat trapping sleeve endings, making it all the more cosy. I'm just in love with it!!

I'm in love with these boots. Its been a year now since I got them and I have to say I, I wear them nearly every weekend! When I got them, I was between the red and green ones but chose to go for the green ones as I didn't know anyone that had them and they were a bit different. I am so happy with my choice. They're the most comfortable shoes I own but while wearing them in, I would suggest wearing thicker socks that won't shuffle around your feet as that's what tends to lead to blisters. Saying that, I've never had a blister in these boots before!

Shirt-Topshop (£15-Sale)

I fell in love with this shirt as soon as I saw it. I bought it in the sales just after Christmas. It's an oversized checked shirt that looks lovely both done up and open over a t-shirt - like I did with this look.
Jeans-Primark (£8)
I've had many pairs of Primark jeans in my life but their skinny high-waisted black jeans are just my favourites! I have a pair with rips and a pair without and I constantly get complemented on them. At first, I assumed they would be so uncomfortable but they are the complete opposite!! I would really recommend getting some.
T-shirt-Primark (£3)
I have had this top for a long time but it is such a staple. It is a fitted, long-sleeved, black top with a small pocket on the left. I wear it with everything...skirts, jeans, pinafores, dungarees...just everything!! So good for layering.
