Trip to Saltaire

So last week I took a trip to Saltaire, which is a few hours drive from where I live, and it was a very successful and happy day. I thought I'd write a post about all the fun we got up to as before I had gone, I hadn't really heard about it.

Firstly, we went for a walk along the canal that goes from Liverpool to Leeds. This was by far my favourite part of the day! It was so gorgeous and the weather was perfect which made it amazing!

It took us about 40 minutes to walk down the canal as we were stopping for photos and wondering at a slow pace but you could definitely walk it in around 30 minutes each way. At the 5 locks, we stopped for a cup of hot chocolate and a snack in a cafĂ© immediately after the locks. It was so yummy and I had a hot chocolate and millionaire shortbread. They have a few gluten free options (the friend I went with is coeliac-check out her blog here for more recipes etc) so if you have any specific dietary requirements, I would recommend popping in.

Once we had walked back along the canal, we wondered around the village and popped into a few shops. There were some really sweet cake shops and other quirky shops so I would really suggest looking around the village.

To finish, we looked around the art gallery and I have to say I wasn't the biggest fan of a few of the floors but I really really enjoyed the one with lots of historic books. It wasn't just a library but it has old Vogue copies and books on mindfulness as well as funny birthday cards and activity books.

...And just before we left, we had a really lovely tea in the diner as again they had a gluten free menu that includes things like butterfly chicken, salads and steak, but from the ordinary menu, I had homemade sausage and mash and it was incredible!!

The Perfect Rolo Brownies

Here's my recipe for the most amazing brownies!

Ingredients:
  • 175g unsalted butter
  • 175g dark/plain chocolate
  • 3 eggs
  • 250g caster sugar
  • 55-70g plain flour (depending on how gooey you like your brownies!)
  • 40g coco powder
  • 2 tubes of Rolos or chocolate of your choice.
Method:
  1. In a glass bowl over boiling water, melt the butter and chocolate.
  2. Once melted, remove from heat and in a separate bowl/jug, whisk together the eggs and sugar.
  3. Combine the chocolate mixture with the egg mixture in a large bowl and then fold in flour and coco powder.
  4. Pour the mixture into a lined brownies tin. This is the point when you can add any chocolates you fancy-malteasers, chocolate orange, rolos. (Rolos are my personal favourite)
  5. Bake at 180'c for 22-25 minutes so that when you shake the tin, it still has a slight wobble.
